VEGAN TACOS + Black Beans + Cilantro Dressing

VEGAN TACOS!!! Ah a favorite meal here! Love how simple it is to prepare! Below are two recipes for the black beans (which as a great protein source) and for a avocado cilantro lime dressing that you can literally put on everything! I like lots of avo, beans, fresh cilantro and limes, and crunchy red cabbage in our tacos.. its just so gooood, satisfying and flavorful! I will post the salsa and guacamole recipes another day (they are go to recipes we do on the weekly as well!

Avocado Cilantro Lime Dressing

  • 1 Avocado
  • 1/2 cup Cilantro
  • 1 tbsp Lime or lemon juice, fresh
  • 1/4 tsp Black pepper, Ground
  • 1/4 tsp Kosher salt
  • 1/4 cumin
  • dash of tapatio (hot sauce) optional
  • 1/4 cup vegan mayonnaise or half extra avocado

METHOD

Blend all ingredients together! Add more lime to taste. I like a lot of lemon and cilantro.

Black Bean Heaven -

I learned how to cook black beans from my good friend Sofia who is from Venezuela,, this is close to her family recipe! 

Ingredients

  • 4 cups dried black beans
  • 10 cups water
  • 1 tablespoon vegetable stock concentrate (optional)
  • 1 teaspoons salt (optional)
  • 2 yellow onions, chopped
  • 5 cloves crushed garlic
  • 2 Tbsp chili powder
  • 1 1/2Tbsp cumin
  • 3 Tbsp lime or lemon juice
  • 1 cup fresh cilantro

You can use canned black beans if you want :)

Method

1 Prepare the beans. Rinse and check beans for any dirt etc. Soak your beans over night to take away gassy after math chances.  Soaking will speed up the cooking process. If you soak, discard the soaking liquid after soaking.

2 Add beans to a large pot 10 cups of water.  Bring the beans to a boil and reduce heat to a simmer. Cook until the beans are soft, but not quite done. Anywhere from 30 minutes to an hour and a half.

3 While the beans are cooking, sauté onions in spices and vegetable stock concentrate with a few tablespoons of water until soft. Add chili powder, cumin, and garlic. Sauté until spices are fragrant.

4 Add the onion mixture and salt to the pot of beans. Cook another hour or so until thickened.

5 Add lemon juice, and simmer.  Just before serving, add more lime juice to taste and all cilantro. 

With delicious vegan tacos, colorful black beans and cilantro dressing; have a healthy meal and stay fit whole day.
