My family grew up eating ice-cream. My husband has been known to have a pint of like 5 different kinds at all time so thats where my love for creating fun flavorful vegan plant based style ice creams come from. It makes life a lot easier sometimes if we find replacements for some of the things we really love. Just now it doesn't need to take away from anything it just gives a lot of awesome!
You don't need to have an ice-cream machine or any fancy gadget besides a good blender (which I highly recommend investing into your health. Its a game changer!)

StrawBerry Blue Vanilla Bean Ice Cream Recipe
1 cup cashews
1 14-ounce cans coconut cream OR full fat coconut milk
1/2 cup strawberries
1/2 cup frozen blueberries
1/4 cup coconut sugar or to taste
1 vanilla bean scraped or 1/4 teaspoon extract
METHOD
Blend all together and freeze in a ziplock bag laying flat or into ice cube treys. Night before . Once frozen break into chunks and blend. And put back in freeze for an hour + ! Scoop up your heaven ! If you let freeze too long just let sit out on counter to soften a bit before scooping!
You can also blend once and freeze for 4-6 hours but this extra step tends to upgrade the ice-cream texture!
You can also make is just strawberry by doubling the amount of strawberries and eliminating the blueberries or visa versa!
