Cotton Candy Vegan Ice Cream

This was... AWESOME!!!! Two recipes, two methods to choose from and all super simple, no appliances needed except a blender or food processor. Check out below for recipe. Cotton Candy Vegan Ice cream RECIPE* Coconut Base

2 cups seeded watermelon

1 can full fat coconut milk (freezing into cubes using an ice trey will make the process go way faster!)

1/4 cup coconut sugar

1 packet pitaya (Optional) If you don't use, add 1 cup more watermelon

1 dash vanilla or 1/2 tsp vanilla bean

3 frozen ripe bananas (optional)

2 cups seeded watermelon

2 cups cashews blended with 1 cup water blended until smooth

1/4 cup coconut sugar

1 packet pitaya (Optional) If you don't use, add 1 cup more watermelon

1 dash vanilla or 1/2 tsp vanilla bean

3 frozen ripe bananas (optional)

 

Methods (2 methods)

1st method Preparation: Freeze coconut milk or cashew cream into ice cubes and use that.

Blend all ingredients together and put into a freezer safe container and let sit for 2-4 hours. Use ice cream scoop and wala!!! that easy!!

2nd method: (If you plan to let freeze solid)

Blend all ingredients until liquefied, transfer to a freezer safe dish, once frozen, brake into pieces and re blend until thick like ice cream.  I prefer the first way! But if you do this, put on a trey OR a zip lock bag and lay flat to make thin enough to break, OR ice treys if you have enough of them to make it! ENJOY!!
