Date Cookies

These are a sweet tooth savor! This is my families favorite treat ! The cooking of the dates makes them chewy,caramel like and absolutely divine! you can make them raw as well but for the ultimate treat try them cooked! Hope you love them! When I went vegan I made sure these were on hand and they got me through my patches of craving chocolate (which was on the daily! haha)

RECIPE

(2) 8 oz. Packages of Pitted Dates
2 Tablespoons of Water
1 Cup Coconut Sugar OR 1/4 Cup Maple Syrup (*if using maple syrup don't add the 2 tablespoon of water)

1 tablespoon Coconut Oil ( optional )
1 Teaspoon Vanilla
1 - 1.5 Cups Mulberries (Or Rice Krispies or Oats) Rice Krispies gives the best texture but not the healthiest version ;)
1/4 Cup Organic  Coconut Shreds

*optional 2 tablespoon Mamma Chia Seeds

 

Chop dates until sticky and in a large flat pan, mix in water, coconut oiland coconut sugar and cook on medium to low heat stirring consistently until consistency is like a paste (about 10 minutes , you will see little bubbles). 

Add Vanilla

Let cool enough to handle.

Mix in  coconut, and mulberries (or rice Krispies). 
Once combined, roll into balls and roll in coconut shreds.
Store in air tight container in refrigerator!
Great as a snack!
